My last post was all about John; so this post is about what Charity and Micaiah have been up to!
Micaiah doesn’t like to blow his own horn, but he thinks he’s pretty cute. 😉
Charity is busy as ever with her crafts! She made a stick horse all by herself!
Reading is her other favorite thing to do! We got her these books recently, and she loves them. They are fun, simple stories about Henry and his big dog, Mudge. We got her the Collector Set #1 and Set #2.
And here is the recipe for the week, funfetti cupcakes like I promised!
Easy Homemade Funfetti Cupcakes
Included in that link is a recipe for vanilla frosting. But, if you’re like me, you can’t imagine eating cake without chocolate being involved. So here is the recipe for chocolate frosting that I used.
Milk Chocolate Frosting
1 cup (230g) unsalted butter, softened to room temperature
3 and 1/2 cups (420g) confections’ sugar
1/2 cup (45g) unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
3 Tablespoons (45ml) heavy cream or milk
Using a mixer, beat butter until creamy. Add cocoa and sugar and salt slowly. Beat until the butter has absorbed the sugar. Add the vanilla and milk to desired consistency.
