Weekly Highlights 2/5-2/11

Last week was a fun week!  Here are the highlights.

Fun with the kids:

Fun without the kids:

On Tuesday Matt and I went out with some friends and saw the movie Is Genesis History? at the theater. It was a pretty interesting movie supporting a young earth creation view! We enjoyed it.

On Saturday I went on my normal shopping excursion to Goodwill and I found some pretty great stuff! Most of it was Lularoe clothing, and that sells very well on eBay. Here’s one of my finds:

This blue cardigan still had tags attached and sold Saturday evening! 
New recipe I tried:

I found this recipe on spendwithpennies.com. It was an easy quick meal that tasted pretty yummy! And it is quite kid friendly.

Layered Doritos Casserole

1 (family size) bag Doritos, any flavor (I used Nacho Cheese)

1 onion, diced

1 pound lean ground beef

1 clove garlic, minced

1 cup salsa

1 package low sodium taco seasoning (or homemade taco seasoning)

1 cup sour cream

1 can cream of chicken or mushroom soup

2 cups shredded cheese, (I used tex mex blend or cheddar)

Optional toppings

Lettuce

Tomato

Olives

Sour Cream

Cook ground beef and onion. Mix with salsa and taco seasoning and let simmer 5 minutes. In a bowl mix the sour cream and soup. Then mix in beef mixture. Then layer slightly crushed Doritos in a casserole dish with the beef and top with cheese and final layer of chips. Bake at 350 for around 20 minutes.
